<p>3. Turn to medium heat and simmer 45 minutes, or until chicken is tender.</p>
<p>4. Remove chicken from the pot and separate the meat from bones and skin.</p>
<p>5. Put the pulled chicken meat back into the pot and add the cream of celery soup.</p>
<p>6. Simmer to keep the chicken and stock warm while you prepare the dumplings.</p>
<p>7. Mix flour and salt in a mixing bowl.</p>
<p>8. Mound the flour then drizzle with ¾ cup ice water, working it into the flour gradually with your h ands.</p>
<p>9. Roll out the dough and let it settle then cut into pieces according to the size of dumplings you want to make. 1-2 inch pieces are the norm.</p>
<p>10. Drop the dumplings into the pot and allow them to cook for about 4 or 5 minutes. They will pop up to the top and float when they are done.</p>
<p>Chicken and dumplings will thicken if you allow the pot to sit for a bit without the heat. You can then serve heaping, steaming bowls with thicker gravy, chicken and dumplings.
